In this quick, concise class, students will learn to cook, smoke, pickle, shave and devour every kind of beet imaginable. If you’re a beet lover already, allow us to add new depth to your devotion. If you’re a beet skeptic, allow us to win you over! For Chef Gracie, the humble beet feels like an ancestral totem – she often says it makes her feel like her DNA is tingling when she eats them as they sustained her Eastern European ancestors for centuries. Today, we have access to so many shapes, colors and sizes of beets. It’s a humble vegetable, no doubt, but it has the capacity to soak in flavors, add brilliant colors and crispy crunchy surprises to many a meal!
