Kouign amann is a popular item in American bakeries these days, and with good reason! It’s crunchy, golden, and buttery; think of it as a caramelized croissant. While its trendiness is relatively recent, it has been around since the late 1800s! Kouign amann originates from Brittany in France and features an irresistible sugary crust that encases tender, flaky, croissant-like layers. It is made with a lot of butter, something Brittany is famous for. Its Celtic name looks strange to American eyes and is even harder to pronounce (try “queen amann”). In this class, you will learn how to perfectly laminate the dough and butter required to achieve this distinctive, flaky, moist texture. We’ll make them plain and with various fillings such as chocolate, fruit, and cheese (yup!). Get your sweet tooth ready!
