A hands-on in-person cooking class. Alongside the tasting of baked goods, a seasonal salad will be served with wine or beer. This class is limited to 12 students. Review our registration and cancellation policies here.

We’re excited to welcome Michelle Polzine to our classroom! We are fans of her work and the 20th Century Cafe. With years of culinary experience under her belt, Michelle will be your guide to baking amazing tarts to celebrate the best seasonal produce. In this class, Michelle will teach you how to make the perfect dough, learned while baking at Chez Panisse. We will make sweet and savory tarts, giving you a mere glimpse of what is possible with this magical dough (plus a surprise application if time allows!). We will talk about embellishments and seasonal adaptations so you will be prepared regardless of the season! Relying on Bi-rite Market’s relationships with local farmers, we’ll be featuring Stan Devoto’s incredible apples, Albion strawberries, dry-farmed Early Girl tomatoes, sweet peppers, and squashes. The bounty of our late San Francisco summer will dazzle and delight in these tarts!
