Let’s go down to Baja California where the surf is good and the beaches are warm. It’s the birthplace of the famous Baja-style fish taco! In class we will make corn tortillas from scratch along with beer-battered fish to tuck inside with all the fixings to spoon or drizzle on top—zesty pineapple salsa, chipotle crema, shredded cabbage. It’s a party on a plate, finished with roasted carrots decked out with pepita pesto. These tacos will transport your auto-responder to out of office—they’re a mini vacation in the palm of your hand.
