To fully delve into lamination\, the technique that creates the flaky layers that define these pastries\, we invite you to a two day workshop with Jennifer\, our resident baking instructor. \nOn the Day One\, you will work in teams to learn how to laminate a yeasted dough and allow your dough to rest overnight. Return on Day Two\, revisit your doughs\, and transform it down three pathways: making kouign amann\, a Breton treat with a crunchy caramel crusts\, making croissants\, both classic and filled\, and making danishes\, shaping and filling them to make variations. SUMMARY:Creativity Explored: Wonderful Blackiful People
DESCRIPTION:Join us to commemorate the launch of Wonderful Blackiful People: Bay Area Changemakers A to Z\, a newly published book by Blackiful\, a cohort of Black artists at CE. The book highlights 26 Black changemakers who\, through their remarkable lives and work\, have each had a hand in shaping Bay Area history. Blackiful artists created portraits of each changemaker to accompany their biography\, recounting the invaluable contributions of these notable Black figures.  \nThe accompanying group exhibition\, on view at CE’s second studio in Potrero Hill\, features twelve portraits from the book self-selected by Blackiful artists. Portraits include civil rights activist William Byron Rumford; teaching artist and sculptor Horace Washington; educator and former Black Panther Ericka Huggins; queer\, nonbinary multimedia artist Ayana “Yanni” Brumfield; pioneering Afro-futurist musician Idris Ackamoor; and beloved San Francisco poet Q. R. Hand\, among others. \nTaken together\, the book and exhibition represent the culmination of more than a year of Blackiful working together\, conducting research\, writing\, editing\, revising\, drawing\, painting\, sketching\, dreaming\, laughing\, singing\, arguing\, talking over one another\, and ultimately savoring the countless challenges and rewards of collaborative work. Blackiful strives to reciprocate the gift of these changemakers’ activism\, their artistry\, their organizing\, and their care by amplifying their stories.  \nBook Launch Party and Opening Celebration\nJoin us for an afternoon of food\, music\, and art to celebrate Blackiful’s newly published book and concurrent exhibition\, Wonderful Blackiful People. Goldie became one of the first \npersonalities in British dance music\, his gold teeth and b-boy attitude placing him \nleagues away from the faceless bedroom boffins who had become the norm in \nintelligent dance music. For the first time\, England had a beat maestro and tough-guy \nhead who could match the scores of larger-than-life hip-hop stars America had \nproduced\, and the high profile of drum’n’bass as the first indigenously British dance \nmusic made Goldie a figure of prime importance. After spending several years working \non his production skills at Reinforced Records (the home of 4hero)\, he founded \nMetalheadz Records\, which released seminal dark yet intelligent singles by Source \nDirect\, Photek\, J. Majik\, Optical\, Lemon D\, Wax Doctor\, and Peshay\, among others. In \n1995\, Goldie released Timeless\, one of jungle’s first and best full-length works of art. \nThe album put him squarely at the top of the drum’n’bass heap — at least in the minds \nof critics and mainstream listeners — though his follow-up\, SaturnzReturn\, displayed an \nambitious\, personal side of Goldie hardly in keeping with jungle’s producer mentality. \nA native of Walsall\, England\, Goldie was born to a Scottish-Jamaican couple and put up \nfor adoption. He bounced around child-care homes and several sets of foster parents \nduring his childhood years\, and became fascinated with the rise of hip-hop\, \nbreakdancing\, and graffiti art. By 1986\, he was involved with breakdancing crews \naround his home of Wolverhampton; after making several trips to London for all-day \nbreakdancing events (and to see hip-hop pioneer Afrika Bambaataa)\, Goldie appeared \nin the English documentary on graffiti art called Bombing. He also spent time in New \nYork and Miami (working in a market stall selling customized gold teeth)\, but returned \nto England by 1988. For a time\, Goldie worked at the Try 1 shop in Walsall (also selling \ngold teeth)\, then moved to London. He began hanging out with two fellow heads from \nthe British hip-hop scene\, Nellee Hooper and 3-D (later of Massive Attack)\, and by \n1991 he’d been introduced to the breakbeat culture that birthed jungle; at the seminal \nclub night Rage\, DJs Grooverider and Fabio pitched ancient breakbeats up to 45 rpm\, \nblending their creations with the popular rave music of the time. Goldie was hooked on \nthe sound of raw breakbeat techno\, and he gradually switched his allegiance to jungle \nfrom the British hip-hop scene that later generated trip-hop. \nThrough his girlfriend DJ Kemistry (later to make her name with the mixing duo \nKemistry & Storm)\, Goldie hooked up with Dego and Mark Mac\, two of the most \ninfluential figures in the emerging drum’n’bass scene. The duo’s Reinforced Records \nand recordings as 4hero were fostering an increasingly artistic attitude to the music\, \nand Goldie learned much about breakbeat production and engineering at their studios. \nHe recorded his first single as Ajax Project\, then debuted on Reinforced as Metalheadz \nwith two 1992 singles\, “Killermuffin” and “Menace.” The 1993 single “Terminator” broke \nhim into the jungle scene — besides pioneering the crucial jungle concept of time- \nstretching (basically extending a sample without altering its pitch) the single evinced the \ngrowing separation between the uplifting rave scene and its emerging dark side\, reliant \non breakbeats and restless vibes. \nThe name was later taken for his influential Metalheadz Records\, which released \nmaterial from a legion of crucial jungle artists: Photek\, Doc Scott\, Dillinja\, Source Direct\, \nPeshay\, J Majik\, Alex Reece\, Lemon D\, and Optical\, among others. Later singles such as \n“Angel” and remixes for 4hero’s Reinforced label spread Goldie’s fame\, and in 1995 he \nsigned a contract with London Records. His first major-label single was “Timeless\,” and \nhis debut album of the same name followed in August 1995. He gained additional fame \nin early 1996\, when an American tour supporting Björk sparked a relationship between \nthe two and led to a brief engagement period before they called off a wedding. Goldie \nresurfaced in 1998 with a high-profile follow-up\, SaturnzReturn\, an epic two-disc set \nincluding one track\, “Mother\,” that in itself broke the 70-minute barrier. The album \ntanked with critics and fans\, leading to a return to the underground later that year with \nthe Ring of Saturn EP. \nThe beginning of the millennium ushered in a new era for Goldie’s musical production. \nHe produced several releases during this period\, the likes of which further established \nthe rough yet similarly emotive sound with which he and Metalheadz were best known. \nExamples include Say You Love Me\, Malice In Wonderland and Breakin Glass\, each of \nwhich were instrumental in the development of Goldie’s own personal style. So too was \nthe output of Metalheadz’ during this period: the label amassed just shy of sixty \nreleases throughout the decade\, nurturing the likes of now-globally known drum and \nbass artists such as Alix Perez\, Noisia and S.P.Y to name a few. \nAt the turn of the decade\, Price received two honorary academic achievements\, \ncourtesy of Brunel University (in Social Sciences) and the University of Wolverhampton\, \nwhere he became an honorary Doctor of Design. He was knighted as a Member of the \nBritish Empire (MBE) not long after\, for services to music and young people. With it\, he \nbecame one of few electronic musicians to ever achieve such an award. \nThis period proved equally fruitful music-wise\, particularly in terms of Goldie’s \nproduction catalogue. He produced official remixes for two globally-known pop stars\, \non Ed Sheeran’s Lego House (2017) and Jessie Ware’s Midnight (2018); he released his \nthird studio album\, The Journey Man\, the likes of which drew reviews from several \nBritish newspapers\, including The Times and The Guardian (2017); he collaborated with \nUK rap icon Skepta\, on Upstart (2018); and he formed Subjective\, a collaborative \nproject with fellow drum and bass producer Submotive. The duo released their first \nalbum on Sony Music in 2020\, with a second album set for release later this year. \nHis DJ achievements were similarly successful. He began a seven-week residency at \nlong-running London nightclub XOYO\, selling out the venue multiple times in the \nprocess; he performed at global festival stages\, including Glastonbury (UK)\, \nTomorrowland (Belgium) and Primavera Sound (Spain); and he ventured into the \nclassical music realm\, hosting and performing full orchestral shows at two of London’s \npremiere concert halls: the Royal Albert Hall and Southbank Centre. \nIn most recent times\, Price has also ventured into the modelling world\, making his \ncatwalk debut for high-end luxury fashion house Louis Vuitton in their SS22 menswear \ncollection. Hill’s first job in San Francisco was at Jeremiah Tower’s “ground breaking” Stars restaurant in 1985. From there\, the self-taught Hill began to implement the tenets that have since earned him a spot on the roster of the Bay Area’s most groundbreaking chefs: use the best local seasonal ingredients. \nAfter opening Aqua with Michael Mina in 1990 and bringing Oritalia to fame in 1993\, Hill transformed the Waterfront Restaurant in 1997\, receiving a Rising Star Chef award by Wine Spectator Magazine. In 2002\, Hill revived Bix Restaurant as a partner and executive chef. Under Hill’s direction\, Bix garnered its first 3-star review from the San Francisco Chronicle. Chef Hill opened Picco and Pizzeria Picco in 2005\, quickly becoming a top Marin County restaurant\, with Pizzeria Picco earning multiple honors\, including Zagat’s Top 10 US Pizzerias in 2012. 2010 marked the opening of Zero Zero\, a “Calipolitan” restaurant featuring artisan pastas\, seasonal crudos and organic soft-serve ice cream. Due to the downturn from COVID-19\, Hill has sold his restaurant partnerships\, and is solely focused on teaching and promoting The Chef’s Press. \nThe Chef’s Press was born out of true necessity in the tiny kitchen of Bix Restaurant down a secret alley in San Francisco\, where Chef Bruce Hill was at the helm of the stoves. In a small kitchen like that\, every second counts. The old cast iron bacon presses used by his cooks trapped steam and were too heavy for many dishes. In 2006\, Chef Hill created The Chef’s Press – a weight adjustable tool that allows food to cook 20-30% faster\, and is vented to release moisture\, yielding better results with greater ease. The Chef’s Press was manufactured in China and sold at Williams-Sonoma from 2008 to 2016. \nIn 2016\, Chef Hill decided to stop manufacturing in China\, and began producing the Chef’s Press Professional line in Oakland California. The new version is made from USA forged steel and sourced from Mid-American Stainless in Cleveland\, Ohio. The steel is stamped into the Chef’s Press by Rago & Son in Oakland\, using a 100-ton press\, just the way Rago has stamped steel since the 1940’s. The custom tooling was designed and built by Precision Metal Tooling\, Inc. in Oakland. The presses are then de-burred by DougCo in Oakland. The de-burring removes most of the rough edges caused by the stamping process. Lastly\, Chef Hill drives the presses to his workshop in San Francisco\, where each press is personally inspected by Chef Hill himself.

Her Meshes of the Afternoon (1943)—with its circling semi-narrative and its groundbreaking use of creative cinematography and dreamlike associative montage—remaining to this day\, infinitely new\, deeply inspiring and prescient in its subtly defiant feminism and disdain for domesticity while works such as At Land (1944) and A Study in Choreography for Camera (1945) are enduringly shocking in their use of creative geography and motion. \nProclaimed by filmmaker Stan Brakhage as “the mother of us all\,” Deren was also a fierce advocate for personal cinema\, composing the visionary theoretical text An Anagram of Ideas on Art\, Form and Film in 1946 and presenting underground screenings in New York City which set the model for today’s network of independent microcinemas and film festivals. Our latest town hall is with the legendary D’Arcy Drollinger! \nNot only is D’Arcy a leader in the drag community here in San Francisco\, she was also just named San Francisco’s very first Drag Laureate! \nThe Drag Laureate of San Francisco program is a joint initiative of the Mayor’s Office\, the San Francisco Public Library (SFPL) and the Human Rights Commission (HRC). D’Arcy was selected by Mayor Breed among 15 applicants following a vetting process that included an 11-member Review Committee from various City Agencies. \nThe format will be 1 hour long Q&A with D’Arcy Drollinger\, so come prepared with your questions about all things drag\, LGBTQ community building\, running a small business and more. \nA portion of the proceeds will be going to Oasis Arts.

We will start our two hour party with a chicken butchery technique: spatchcocking\, as we remove the backbones from a bunch of chickens and set them to roast in the oven. Later we’ll paint them with a honey and miso glaze\, so the skin gets all crackly and yum. Then we’ll whip up a bunch of San Francisco’s own garlic noodles to serve under our chicken – the garlic\, oyster sauce\, and fish sauce giving a punch of umami to complement the honey miso of our chicken. For dessert\, make a crunchy batch of stovetop sesame brittle that will harden in no time. He moved on to help open several restaurants\, attend the California Culinary Academy\, and study under European chefs with Michelin backgrounds. Later\, Mike served as an executive chef for catering companies\, wineries and country clubs.  When his son was born\, Mike transitioned his career into teaching\, returning to the CCA where he eventually became the Executive Chef and Director of Academics. Mike also returned to school for training in his new field\, earning a Master’s Degree in Education. Having taught for Le Cordon Bleu North America in both online and brick and mortar schools\, Mike is thrilled to return to teaching in a neighborhood-based community. DESCRIPTION:Every day\, SF Chronicle staff photographers are tasked with documenting San Francisco. \nCameras in hand\, they venture out to cover breaking news\, illuminate the hidden corners of our metropolis and explore the people and issues that define our city in all its beauty\, desperation and resilience. \nOver the past several years\, Chronicle photojournalists have depicted the ravages of the fentanyl crisis\, covered the realities of climate change and captured the wisdom of Black elders. \nNow\, they’re sharing how they do the work. \nOn June 22nd at 6 p.m.\, join The San Francisco Chronicle Photo Team\, including 2023 Pulitzer Prize finalists Gabrielle Lurie and Stephen Lam\, live at Manny’s for a presentation and conversation about the ethics\, practice and practicalities of photojournalism today. \nIn our next Chronicle Live at Manny’s\, Chronicle photographers will share the stories behind some of their favorite images and take you inside the process of making them\, from finding unique angles to earning subjects’ trust. \nGet your tickets! \nYou’ll hear from: \nNicole Frugé: The San Francisco Chronicle’s Director of Visuals\, Frugé leads one of the most diverse metro photo staffs in the nation. Frugé was named the Jim Gordon Photo Editor of the Year in 2019\, Photo Editor of the Year in 2018 and the Chronicle’s photo editors were twice named the Picture Editing Team of the Year by the National Press Photographers Association’s Best of Photojournalism contest. Before photo editing\, she spent 10 years working as a staff photographer for newspapers in Texas and Florida. \nGabrielle Lurie: Raised in Washington D.C\, Gabrielle Lurie picked up a camera at 17 years old. She moved to New York City where she continued to photograph and study art history at New York University. Her work has appeared in The New York Times\, Wall Street Journal\, LA Times and The Guardian\, and she is the three-time winner of Pictures of the Year International’s Local Photographer of the Year and a two-time Pulitzer Prize finalist. \nStephen Lam: A native of Hong Kong\, Stephen Lam left his studies in mechanical engineering to pursue photojournalism as a fun college elective. A former Chronicle intern\, Lam was an editorial and commercial photographer in the Bay Area and his versatility has led him to collaborate with a vast range of clients including Reuters\, Der Spiegel\, Viator and L’Oréal before joining the Chronicle. Stephen is fluent in Cantonese and English. He is a 2023 Pulitzer Prize finalist. \nYoshi James: Yalonda M. James is an award-winning staff photojournalist and video producer at The San Francisco Chronicle. Her storytelling passion lies in documenting social justice issues and amplifying voices whose stories are seldom heard. James was a 2008 Pulitzer Prize finalist with her team from The Charlotte Observer for a project called\, “Sold a Nightmare.” She is also the director of short documentary films\, “The BLM (Black Lives Matter) Bridge Protest: One Year Later” and “Singing for KING.” \nThe Chronicle Photo Team is an award-winning group of photographers\, video journalists and editors and one of the most diverse photojournalism staffs in the country. This class is limited to 12 students. Review our registration and cancellation policies here. Masks are welcome. \nHave you ever wanted to decorate a cake but don’t know where to start? In this introductory class\, Chef Molly Pam will teach you the essential techniques of cake decoration\, including stacking\, crumb coating\, and smooth icing a cake. You will learn how to vibrantly color Italian meringue buttercream frosting\, properly wield a piping bag\, and practice piping techniques\, including ropes\, shells\, rosettes\, and drop flowers. Practicing these piping skills will transfer to many future projects: they can be used on tarts\, cookies\, eclairs\, or any other baked good you want to decorate! \nOver a light meal\, you will sketch out your cake decorating plans; Molly will coach you if you need advice or inspiration. Finally\, you’ll decorate your own personal cake to take home. \nIn order to give you ample time to practice decorating skills\, we will be baking vanila cakes and preparing the Italian meringue buttercream before class. However\, recipes will be provided so students can have a reference at home. \nBeginners are welcome in this class. Each student will work on a 4’’ square cake that will feed 3-4 people.
