18 Reasons: Intro to Gluten-Free Baking: Sweet and Savory

A hands-on class culminating in a dinner of the class’s baked goods served with wine and beer.
Are you gluten-free or interested in incorporating more gluten-free options into your cooking repertoire? Chef Marie Brennan will discuss some of the common challenges of adapting recipes to be gluten-free and how to confidently make delicious baked goods (that just happen to be gluten-free). Marie chose gluten-free versions of what she thinks are baking basics for all occasions: your quintessential zucchini bread to use up plentiful (or overgrown!) summer squash, quiche that uses what you have on hand for a hearty dinner or brunch, pizza for nights with friends and family, and of course, a cookie to end on a sweet note (featuring rich walnuts, who are underutilized in cookies in general!). We’ll select the tastiest of summer’s produce to fill these recipes, but you’ll walk away with a template for future seasons and flavors. The class will start with a demonstration and a brief lecture on the methods utilized in class before diving into the recipes, working together, then finishing with a communal meal to end the night.

Marie Brennan graduated from the University of Wisconsin with a degree in Dietetics. An avid traveler, she has explored her love of food while on the road. Marie’s travels have taken her to study cheese-making in Tasmania, Thai cuisine in Bangkok, tea and fermented foods in the mountains of Korea, raw food in Western Australia and the kitchens of numerous meditation centers around the world. She moved back the the USA to study in the Natural Chef program at Bauman College, where she also worked and taught for several years.
