18 Reasons: A Spanish Brunch

This is a live, hands-on cooking class held online via Zoom. Class is limited to 12 students to create an interactive, dynamic experience. The Instructor will be assisted by a remote 18 Reasons staffer who will facilitate conversation during class and ensure all students are attended to. We will be recording the class and we hope to make the recording available to students after an editing process to protect the privacy of our students’ homes.
Registered students should take 30 min before class begins to do the following: download and set up Zoom, test audio and video, wash ingredients, and bring out equipment in the kitchen, per the list linked below. 18 Reasons staff will e-mail registrants one message containing class recipes and a Zoom meeting link; check your junk/spam/event folder in case you do not see the e-mail. Search for any email from 18 Reasons, looking for a subject line containing the full title of the class.
Meals in Spain follow a reliable pattern; the equivalent of brunch is a hearty second breakfast, around 11am. A classic brunch centers around a “pincho de tortilla”, featuring a wedge of the famous Spanish omelet. This is accompanied by bread, with tomato if it’s in Catalonia. Potato omelet might just qualify as the national dish, as its ubiquitous. In this class, we will learn to make tortilla the traditional way, and enjoy it for brunch (quite frankly, it’s delicious any time of the day). One of the big secrets is using enough eggs, and now that they are in season, it’s the perfect time to master this versatile dish!

Camila Loew holds a Ph.D. in Humanities and is a certified nutrition consultant. Having lived alongside the Mediterranean for almost two decades, she believes that the best cooking relies on simple recipes with outstanding ingredients. That’s the Mediterranean way she conveys in her classes, along with the concept of sobremesa, which happens to be the name of the company she runs. Sobremesa is the leisurely time we spend gathered around the table. In addition to running Sobremesa Culinary Tours, through which she offers delicious cultural and culinary experiences abroad for fellow food-lovers, Camila works at the Torribera Mediterranean Center, and teaches academically about Mediterranean food culture to American students abroad.
